Usuba

The usuba is a traditional Japanese single-bevel vegetable knife. The name means thin blade, and that describes exactly what it does: thin, precise cuts through vegetables without cracking or bruising the produce.

It is primarily a professional tool. That is worth saying upfront. The usuba rewards developed knife skills and single-bevel sharpening technique. If you are looking for a high-performing vegetable knife that is more accessible, the nakiri is the double-bevel alternative built for the same work.

What it is built for

Precision vegetable work. The usuba excels at paper-thin slices, fine julienne, and katsuramuki, the technique of rotating a daikon or cucumber against the blade to produce a continuous thin sheet. The flat, straight blade makes it possible to peel and slice in a single controlled motion that a curved blade cannot replicate.

It is not a general-purpose knife. It does not rock. It is not designed for proteins. It does one category of work exceptionally well.

Single-bevel: what it means

Like the yanagiba, the usuba is sharpened on one side only. The flat back tracks against the cutting board and keeps cuts precise. It requires a different sharpening approach than double-bevel knives — the bevel side is sharpened at the existing angle, and the back is kept flat.

Most usuba are made for right-handed use. Left-handed versions are available.

Kanto and Kansai styles

There are two regional styles. The Kanto style, associated with Tokyo, has a squared tip. The Kansai style, associated with Osaka, has an angled tip. Both perform the same work. The difference is traditional and largely regional preference.

Usuba vs nakiri

The nakiri is double-bevel, sharpens like any other knife, and handles the same vegetable tasks with less technique required. If you are building a knife kit and want a dedicated vegetable knife, the nakiri is where most cooks start. The usuba is where some of them end up.
