SG2 Knives
SG2, also sometimes called R2, is a powdered stainless steel developed in Japan by Takefu Special Steel. It is one of the higher-performing steels used in kitchen knives today.
Think of edge retention the way you think about tires. A 60,000-mile tire lasts longer between changes than a 30,000-mile tire. That is what you are buying with SG2. The edge stays working longer under normal kitchen use, which means fewer trips to the stone.
Stainless without compromise
SG2 is stainless. It does not require the same attention as carbon steel. Wash it, dry it, put it away. You will not see patina or surface oxidation under normal use like you would if it were carbon. For cooks who want high performance without a maintenance routine, this is a top steel to look at.
How it sharpens
SG2 holds its edge longer because of how it is made. The powder metallurgy process produces a fine, uniform carbide structure that resists wear in a way most steels cannot match. That structure is also what makes sharpening a bit more demanding than carbon steel. A quality diamond stone or ceramic gets better results. Standard waterstones work, but the process takes longer.
One thing worth knowing: a thick blade behind the cutting edge will make even a sharp knife feel slow and dull in use. SG2 knives are typically ground thin, which is part of why they perform the way they do.
