The 00 is the tool you reach for when what you're cooking is in liquid and the liquid needs to stay behind. Poached eggs. Olives from a jar. Vegetables pulled from blanching water. Dumplings. Whatever you've been braising that deserves a clean lift to the plate without the surrounding broth following it there.

The slots are sized and placed deliberately, not just punched through wherever. The bowl still holds one tablespoon, still comes to a point, still has the flared lip that scrapes corners. Everything that makes the 01 great is here; the 00 just does something the solid version can't.

If you cook often enough to own both, you will use both constantly. They live next to each other. You'll reach for whichever one the dish demands, without thinking about it.
