Miyabi Knife Sharpening Service

Miyabi knives are built around a narrow edge angle and harder steel than most knives in a home kitchen. Both of those things affect how they should be sharpened. Our sharpening service is designed for Japanese knife geometry, and we work on Miyabi specifically.

Order a kit, pack your knives in the included packaging, drop the box at any mailbox or post office. We sharpen and return them, typically within 1–2 days of receiving them.

How It Works

  1. Order your kit. A pre-paid, USPS-approved kit ships to your door. Packaging and return postage are included.
  2. Pack your knives. Use the provided packaging. Include any other brands you want sharpened at the same time.
  3. Drop it in the mail. Any mailbox or post office. No trip to a shop required.
  4. Get them back sharp. Typically within 1–2 days of us receiving them.

Which Miyabi Knives Do We Sharpen?

We sharpen all Miyabi lines, including Birchwood, Artisan, Evolution, Kaizen, Black, and Mizu. We also sharpen serrated Miyabi knives and scissors. A Note on Angle and Steel

Miyabi's flagship lines use micro-carbide powdered steel hardened to around 63 Rockwell (a scale for measuring hardness). That's a harder steel and a narrower angle than most German or Western knives. Sharpening at a steep angle removes steel without necessarily improving the edge. We sharpen a geometry well suited for the performance of the knife in your kitchen.

Frequently Asked Questions

Do I need to be the original owner? No. We sharpen Miyabi knives regardless of where or when they were purchased.

Can I include other brands? Yes. You can mix Miyabi with Wüsthof, Shun, Global, or any other brand in the same kit.

Is shipping included? Yes. The kit includes packaging and a pre-paid, pre-printed return label. You pay for the kit and the number of items for service; we cover the return shipping.

How often should I sharpen my Miyabi knives? For a home cook using them several times a week, once or twice a year is typical. Miyabi's hard steel can hold an edge longer than most knives. Honing with a ceramic rod between sharpenings extends that further.

What about pull-through sharpeners? Pull-through sharpeners are preset to a fixed angle, usually 20° or higher. Using one on a Miyabi grinds a new bevel at a different geometry rather than maintaining the original edge. If your Miyabi has been through a pull-through sharpener, we can reset the edge to the correct angle.
