What to Know About Henckels International Steel
Henckels International knives use German-style stainless steel at around 56–57 HRC (a metal hardness measurement). These are softer than Zwilling's ice-hardened lines. That means the edges respond quickly to honing and come back easily with sharpening, but they also move around more with regular use. Regular honing between sharpenings makes a real difference with these knives. When the edge stops responding to honing, that's when to sharpen.
