The cut sequence
The goal is control. A sharp knife follows your intent; a dull one forces extra pressure and can slip. Keep the avocado stable and move in a simple progression:
- Hemispheres: Cut around the pit, twist, and separate.
- Quarters: Place the pit half flat-side down, then cut into quarters.
- Slices: Slice the quarters cleanly, consistent spacing.
- Sticks: Stack slices and cut lengthwise.
- Cubes: Turn the sticks and cut across.
Small note: keep your off-hand above the board and out of the blade’s path. Let the knife shape do more work than you.

Guacamole Verde

Ingredients
- 1 large avocado
- 1 tsp lime juice
- 1 tsp cilantro, chiffonade
- 1 tsp white onion, small diced
- 1 tsp serrano pepper, minced
- 1 tsp tomatillo, small diced
- 1 tsp kosher salt
- 1 tsp queso fresco, crumbled
How
- Mash avocado gently—stop before it turns creamy.
- Mix in all vegetables except the tomatillo.
- Season with salt and lime. Adjust to taste.
- Garnish with tomatillo and queso fresco.
- Serve with tortillas or chips.
