What We Sharpen
Most knives can be restored to clean, confident cutting with the right technique. At Vivront, we sharpen kitchen knives and everyday tools with care, consistency, and professional equipment, whether you send them by mail or drop them off in our Edina shop.
If it lives in your kitchen, chances are we can sharpen it. Here’s a full look at what we accept, how we treat each type of blade, and what you can expect when they return home.
Chef Knives
From Western chef knives to Japanese gyuto, these all-purpose blades sharpen beautifully. We restore a clean, even edge that glides through produce, proteins, and everyday prep.
- 3.5”–12” Western chef knives, and larger
- Japanese gyuto (all steels) and other Japanese styles

Santoku, Nakiri & Vegetable Knives
These thinner knives benefit greatly from professional sharpening. You’ll notice immediate improvements, especially with onions, herbs, and softer produce.
Japanese Knives
We sharpen Japanese knives with respect for geometry and steel and temperature, etc. Thin grinds and high-carbon blades receive careful, consistent treatment to maintain performance and prolong their life and performance.

Paring & Utility Knives
Small knives are some of the most heavily used tools in the kitchen. Fresh edges improve detail work. Your herbs, citrus, garlic, trimming, small fruits, and vegetables will all be easier.
Serrated Knives (Including Bread Knives)
Yes. We sharpen serrated knives. Serrations can be refreshed by gently reestablishing the peaks, improving bite and reducing the tendency to tear. Bread knives often gain the very noticeable improvement after service.
Kitchen Shears
We sharpen kitchen shears used for herbs, packaging, poultry preparation, and general cooking tasks. Improved alignment and fresh edges extend their useful life significantly.
Broken Tips & Minor Repairs
We can reshape tips, remove small chips, and restore damaged edges. If you're not sure whether your knife is salvageable, send it. We’ll take a look and do what’s appropriate for the blade.
What We Don’t Sharpen
A few tools fall outside our process. This helps us maintain consistency and protect your equipment.
- Ceramic knives
- Single-bevel knives requiring full uraoshi work (yanagiba, usuba, deba)
- Damascus blades with structural damage beyond repair
- Low-quality gadgets or knives too thin to sharpen safely
