Manage Patina

Why Carbon?

Knives with high carbon content are typically stronger (harder) than most knives and wear more slowly than softer stainless knives. They can be less strong with lateral (side to side) forces. However they perform really well overall when under "normal" use. 

Managing Carbon Knives

Carbon knives will patina over time, like a copper roof will turn green. A carbon knife will typically turn shades of darker browns.

Store them dry

Moisture increases the likelihood that your knife will rust. If you see red portions you can use a rust eraser or scrub pad to gently remove it.

Apply an oil

Create a barrier between your metal, the air and water around it with something like a Camellia Oil. These are typically hydrophobic in nature and availbie in knive shops near you. 

Patina

If you’d like, we can suggest options for advancing the patina on your carbon knives. Some use coffee or even coke a cola.
