Yoshimi Kato, a blacksmith from the esteemed Takefu Village Knife Co-Operative in Echizen, is renowned for his masterful craftsmanship. He combines ancient knife-making methods with modern techniques to create highly unique pieces, a testament to his dedication, enthusiasm, and steadfast commitment to excellence.

Traditional Gyuto Shape which will excel at most kitchen tasks including slicing.  A Gyuto shape has a flatter landing back half of the blade compared to Western style chef knives which allows for better use when pushing cutting.

SG2/R2 as the Core with a Stainless Steel San Mai construction makes up this blade with a Unique Circle engraved pattern.  SG2 is a premium Stainless Steel made using Powder Metallurgy, It now has several names including R2 as multiple manufactures are making it.
