"How often should we sharpen"
This is a common question asked daily in our shop in Edina, MN when customers pick up their kitchen knives from service. The answer can be both short or long.
Basically you'll need to sharpen (remove metal) when ever you want and less often if you're doing a little work in-between services to 1) push your cutting edges straight and to 2) leave some texture on them.
Okay. So, with tool should I use?
Most don't use hones. We hear things like, "I never use that thing" and "I used it once and it made my knife duller" and the most frequent "I'm afraid of that thing."
