Bunka knives are a time-honored Japanese blade, designed for multi-purpose use both as a vegetable knife and a slicer. The sword shape gives them a wider and straighter edge than Yanagi types for chopping vegetables, and a longer blade than Usuba for effortless slicing of fish. The Ei series designation represents a more pointed approach to the shape. The spine drops down from the handle effectively giving more hand clearance between the handle and cutting board.
