The Miyabi Evolution series is polished to a mirror finish, the ice-hardened blades are durable and corrosion resistant. Made from fine carbide FC61 steel, the Evolution series offers the signature sharpness for which Japanese knives are known. The ergonomic, triple-rivet handle supports both Western chopping and Asian rocking cuts.
